Sora provides dinner on most Fridays and Saturdays and following breakfasts at Pembroke Springs Retreat. Pembroke Springs Retreat is a unique destination located in the Northwestern part of the Shenandoah Valley in the state of Virginia. Just 90 minutes drive from Washington DC, the vast 175 acres of land has natural forests, springs and a Japanese themed 5 room Bed and Breakfast with amenities such as family sized indoor bath tubs ("ofuro") with the natural spring water heated to 104 F and "Yukata" bathrobes. Guests enjoy the tranquility of the nature and the sense of peaceful unity of the Japanese culture.
Chef Sora's role at the retreat is to ensure rejuvenation for the guests from the food aspect, by delivering carefully crafted dishes incorporating fresh seasonal ingredients with techniques and products of Washoku, the Japanese cuisine. Many of the dishes are based on traditional home cooking recipes that use items that are proven to offer health and environmental benefits. With the belief that locally sourced quality ingredients is key to Washoku or "food of harmony" as the word literally translates, she showcases flavors made possible by the bounty of nature and hard-working friends in agriculture.
